Puffed Rice Upma

New recipes are sometimes created while experimenting in the kitchen.  This usually happens when the refrigerator does not have anything to appease your hunger pangs, the snack boxes gape at you mockingly with only empty wrappers but no eatables inside!!!!

Then I noticed some 'puffed rice (pori in tamil and murmura in hindi) and roasted groundnuts and some veggies in the fridge - with these I decided to cook up something delectable.  We shall call this Puffed Rice Upma.  

Puffed rice or pori is puffed grain made from rice commonly used in popular street food bhel puri or used in snack foods and other breakfast dishes. Rice kernels are heated under high pressure along with steam to create puffed rice.  Puffed rice is to rice as popcorn is to corn.


Ingredients:

puffed rice
groundnuts
mustard
urad dal
curry leaves
carrots, grated
green chillies, chopped
capsicum, chopped finely
onions, chopped finely
salt to tate
turmeric powder

Method:

  • Put the puffed rice in a wide sieve and place this over a vessel and pour water over this.  Allow the water to drain out into the vessel below.  This is to soften the rice.  
  • In a tawa, heat oil and add mustard seeds, ural dal, groundnuts and roast well.  
  • Add onions, green chillies, curry leaves and saute. 
  • To this add the grated carrots and capsicum and stir for 1 to 2 minutes.
  • Add salt and turmeric and saute.
  • Toss in the puffed rice and mix well.
  • Serve hot
